We are currently sold out of geese until fall 2015.

 

We have enjoyed integrating geese into our farm as they are excellent grazers and have interesting personalities to have around.

We raise Embden geese and start them in early May. They are on grass all summer long; given ample room to roam as much as possible during the day, enjoying their social antics and conversation. They had access to fresh water to drink in and a mobile pool that we moved around for them to play in. In addition to being able to roam and enjoy grass, we feed a certified-organic, soy-free ration.

Instead of having turkey for Thanksgiving, Christmas AND Easter, why not consider a roast goose?

A chef’s favourite, Embden are one of the largest breeds of geese and we have whole birds available that are an average of 8.6lbs/bird. Goose meat is richer and darker than turkey, the fat melts away during cooking leaving deliciously tasty and succulent meat. The goose fat collected during cooking makes scrumptious roast potatoes.

    I am not looking to buy a goose. I am looking for some goose fat, about half to one kilo. I am told that British cooks and chefs use it to make the best roast potatoes ever. I cannot find anyone in Edmonton who sells it.

    Maybe you can help me?

    Hi Diana,
    At this time we don’t process the goose into cuts or fat. We only sell whole geese. We can concur that the fat is wonderful for cooking in. Whenever I roast a goose, I make sure I gather the fat and use it for roasting vegetables, etc. It is delicious! We do have smaller geese in the 5-6lb range which are nice for a smaller meal. I will cook one of those up for us (we are only two) and get about 2 cups of fat off of it to use.

    Diana, Greens, Eggs & Ham has goose fat. They farm outside of Leduc, but I know that they go to some farmers’ markets in Edmonton.

    As baking & cooking with goose fat is not only healthy but is becoming more popular, I searched the internet for a supplier in Alberta. I came across your site & was much impressed with your superior natural farm practices. I hope that you explore the goose fat sales which is very difficult to find.

    Thanks for the encouragement. Right now we don’t have on farm facilities to legally process the goose fat and the geese into cuts so there would be added expense of renting a facility, etc.

    We know there is a market for the fat but to get the fat we need to raise the meat and need to ensure there is a market for it. If you roast one of our geese you get a few meals of meat plus about 1-1.5 cups of the fat with it…

    Just curious - what would you pay for a cup of goose fat?
